I didn't post a meal plan last week, because I truly didn't have one. The truth is I don't have much of a plan for this week either. We have been so amazingly blesssed by our community and family, people have been bringing us meals with plenty of leftovers to take care of lunch the next day. Last week I even had my MIL staying with us so I didn't have to think about breakfast either, by the time baby and I got up my older two kids had already eaten. Amazing right?
So on my meal plan this week is breakfast. Yes just breakfast. I am going to attempt to make breakfast the night before so the kids can grab it out of the fridge themselves and just eat it. I have been way too slow in the morning to get the kids a full home cooked meal before their bellies start rumbling. So here it goes:
Monday: Boiled Eggs, Mangos, Rye Bread with Butter
Tuesday: Baked Vanilla Oatmeal Squares
Wednesday: Egg Pudding
Thursday: Leftover Oatmeal Squares
Friday: Boiled Eggs, Crackers, Cheese, Fruit
Saturday: Breakfast with my Parents
Sunday: Quiche*
I usually love a hot breakfast but I am just not able to get it on the table right now, so these make ahead items will have to do. I'll let you know next week how it goes!
*The Quiche is from the freezer so I just have to defrost it before hand
