Meal Plan ~ February 2013 week 3
We have snow! I have to celebrate the little things and in this area of the world snow is a rare and beautiful treat. We are lucky to get one snowfall per year and they never stick around for more than a day. But it was a beautiful day, playing outside with the kids and watching the snow fall from my kitchen window, plus our day ended with hot cocoa, which made my boys happy. Last week fell short of my expectations. Partly because I planned on doing more than was reasonable and partly because I just plain ran out of steam. We still ate great meals and I still put plenty into my freezer, but a few things were just not done (like empanadas or chicken pot pie). Crab QuicheIt took me all week to make my quiches instead of one day and I overcooked a set making them a poor choice for the freezer, but still edible. I also forgot to take pictures of our food or they just didn't come out well. Despite these little setbacks we really had a good week.
The baked bell pepper breakfasts from Food Renagade were a success, I loved mine, my kids mostly just ate the egg, bacon and cheese out of the middle. I have set aside a little bit of time this coming week to "catch up" from last week. I can't give you a total of where we are on the freezer saga just yet, because many things are waiting to be properly stored and loaded into our deep freezer. This week is a lighter week, without a ton of extra things to do outside of normal meal times. Here is what the third week of February looks like:

I am currently 36 weeks pregnant and my goal is to get my 50 meals in the freezer by the time I am full term, so this is my last week of serious freezer cooking, wish me luck!

Please note that I use whole real foods in my cooking as much as possible. I may have linked up a recipe that calls for low fat sour cream, but rest assured I will be using whole fat sour cream, possibly made in my own kitchen (depends on cream availability at the farm). I use these recipes as a starting point and do my best to create something that works for my family
