Coconut Flour Cookies with Chocolate

I found this recipe over the summer when I was making meal plans for my parents while they started their grain free endeavor (which seems to be going pretty well for them). I was helping them plan out basic meals and then making some grain free baked goods to go along with their meals. When I tried the cookies as they were originally written I couldn't get over the stevia taste (I was probably using a subpar brand of stevia). So on my next batch I played around with the amount of stevia, but it still didn't taste right. However the addition of orange flavored dark chocolate eliminated the slight bitterness that can accompanying stevia, making this a pretty easy grain free cookie, the hardest part is waiting for them to cool down enough to smear chocolate on them and eat them.

 

Coconut Flour Cookies with Chocolate  

 

3/4 cup coconut flour

1/4 teaspoon sea salt

1/4 cup melted butter

1/4 cup coconut oil

1 cup whole milk

6 eggs from pastured hens

1 TBSP vanilla extract

1/2 tsp liquid stevia

1/2 cup dark chocolate, melted

1 tsp coconut oil

1-2 drops orange essential oil (or 1/4 tsp orange extract)

 

Preheat  oven to 350F and line a baking sheet with parchment paper (I use a baking stone). Put coconut flour, salt, butter, coconut oil, milk, eggs, and vanilla in a mixing bowl. Use an immersion (handheld) blender to mix all of the ingredients, then add stevia a little bit at a time tasting as you go. I think you could probably use a food processor, but really you may as well get an immersion blender, I use mine daily. Use a spoon to drop the cookies on the sheet. Bake in the oven for 15-20 minutes. Allow the cookies to cool. While the cookies are cooling mix the melted dark chocolate, teaspoon of coconut oil and orange flavor together (I know I am supposed to use a double boiler, but I just melt it right in a sauce pan over very low heat stirring as it melts). Dollop about a teaspoon of chocolate over the baked cookie and spread it around. You can eat them right away with the warm melted chocolate on top or store them in the fridge to allow the chocolate to set.

 

Makes approximately 24 cookies
