Asparagus Breakfast Skillet

School has begun. My world, like most Moms, begins before the light of day has reached me. I am not a morning person. If I want to get a workout and shower in before I become my kids personal shuttle then I have exactly 15 minutes to get breakfast on the table. Real breakfast, full of real whole foods.

Dark Chocolate and Orange Cheesecake Bites

 

I don't know how original these are. It seems like there are thousands of freezer candies (or fat bombs) out there. I didn't realize that until this morning when I was actively searching pinterest to try and make sure I wasn't duplicating something someone has already done. I came up with the idea because after having these freezer candies (yeah I know, fat bombs. But for some reason I just don't like the sound of fat bomb, so I will stick with freezer candy or freezer cheesecakes, that sounds much more delicious and doesn't remind me of WWII and the atomic bombs...eh, where was I?)

Lemon & Berry Infused Water

Drinks can be a slippery slope when you are trying to avoid excessive amounts of sugar. I like to make a batch of infused water every few days so I have something flavored to sip on. I usually look in my freezer for partially used bags of frozen organic fruit and just toss about a cup to a cup and a half into a gallon size glass jug (I do try to use organic because the whole fruit is going to be sitting in my water for several days and I don't want pesticides flavoring my water, just fruit). Or if I am making pickles and I have a few little cukes that don't fit I chunk them up and add them to the jug. I have discovered a few flavors I don't personally care for (cucumber and lime sounded good, but tasted gross) and a couple that I really like to make over and over. This lemon berry variation is currently my favorite. It reminds me of strawberry lemonade, it isn't overly tart but the berries definitely lend a touch of natural sweetness.

Coconut Flour Cookies with Chocolate

I found this recipe over the summer when I was making meal plans for my parents while they started their grain free endeavor (which seems to be going pretty well for them). I was helping them plan out basic meals and then making some grain free baked goods to go along with their meals. When I tried the cookies as they were originally written I couldn't get over the stevia taste (I was probably using a subpar brand of stevia). So on my next batch I played around with the amount of stevia, but it still didn't taste right. However the addition of orange flavored dark chocolate eliminated the slight bitterness that can accompanying stevia, making this a pretty easy grain free cookie, the hardest part is waiting for them to cool down enough to smear chocolate on them and eat them

Raspberry Lemon Mousse

 

I am kicking off my October of real food, mostly grain free, low sugar treats with this easy 5 minute concoction that could find its way to a breakfast table, snack time, and of course, dessert.  Technically this is a mock mousse, as it isn't made from whipped cream or egg whites. I don't really have a better name for this treat and honestly my mouth doesn't really care what it is called. The raspberry seeds and the ricotta make the mousse raw and a little coarse to go with the creamy, while the tangy lemon enhances the sweet raspberries. Very easy and definately yummy.

 Raspberry Lemon Mousse

 

15oz whole milk ricotta

2 TBSP sour cream

1 TBSP lemon juice

zest from half a lemon

1 1/2 cups frozen raspberries (you can use fresh, but you might want to chill the dish before serving)

2 egg yolks from pastured hens (you can add two additional yolks without losing the consistancy, if you want more nutrition)

Liquid stevia to taste (I used about 5 drops of SweetLeaf, but add this last so you can taste and adjust)

 

I use an immersion (handheld) blender, so I just toss everything into a bowl and whirl it into a fluffy mousse like consistency. A blender or food processer should work as well, but then clean up isn't quite as easy.
