Pan Seared Cauliflower and Spinach

My focus for November is side dishes! I have fallen into a rut since the birth of our youngest; I either serve a simple salad with a ferment or a steamed and buttered vegetable with a ferment, or even just a ferment. I also tend to cook a lot of one pot meals (with vegetables in them!). I haven't given sides much thought at all over the past several months unless we were having company over. I love veggies, so it is time that I shine a proper spotlight on them for my family. I am excited to start digging out some of my older long unused side dish recipes, to experiment with what I have on hand, and to head back to Nourishing Traditions for inspiration.

Simple Cinnamon Berry Compote

Today I have a guest post! It is my Dad, Granddad to my kiddos, and Dennis Green to the rest of the world. Growing up my Dad loved to take over in the kitchen to make special breakfasts and special treats (often involving ice cream or chocolate and peanut butter), today is no different. In order to give me a little break he sent me one of his tried and true quick dessert recipes. I expected just a simple ingredient list with a few directions, but he went the extra mile and created a whole article for me (Thanks Dad!). So without further blathering from me, here it is.

Grain Free Chocolate Cookies

My goal today was to create a simple, tasty, sturdy chocolate cookie that could be used like an oreo, to sandwich yummy stuff. Particularly the strawberries and cream frosting I happen to have in my fridge. I succeeded on two out of three goals, these are simple and tasty, but not as sturdy as I hoped. Several attempts led to a sturdier cookie than I started with, but not a crumble free dip in milk cookie. Knowing that my goal hasn't been reached I spent the last 45 minutes searching pinterest, google and yahoo to try and find an alternative cookie to link to so you can enjoy the delicious paring of light strawberry frosting and deep salty chocolaty cookie, but sadly I could not find a recipe that would work. So for now I will post what I have with a warning of potential crumble and continue working on improving this cookie's sturdiness and dunk-ability

Strawberries & Cream Frosting

I am not a huge frosting fan. I usually find the stuff to be sickeningly sweet. My mom, my boys, my husband, they are the type of folks who could skip the cake and just eat the frosting. I want the cake, with a little bit of light and airy topping. My favorite frostings are usually cream cheese based or whipped cream. This one has both! This frosting on top of a basic soft yellow cup cake reminds me of strawberry shortcake. The strawberries are subtle and not overwhelming.

Maple and Pumpkin Pudding

We enjoyed this festive fall pudding for breakfast over the weekend and then again and again, as I wanted to figure out how to do this with less mess. If you want to eat this warm right after you make it then you'll need an extra dish for your arrowroot powder. However if you want a chilled pudding you can skip the arrowroot and rely on your egg yolks and refrigeration to set your pudding. Either way it is a tasty way to enjoy pumpkin.
