Cinnamon and Coconut Sugar Whipped Cream

I have had a lovely weekend with family, but visiting with family is a social affair not to be spent isolated in my back-of-the-house kitchen. Except late at night when my Mom and I make fermented collards, kraut, green beans and peppers (maybe next year October will be my month of ferments). Regardless any sweets or treats we have enjoyed have been beyond simple, just like this very basic little recipe. I served this straight on small little dishes as an end to a light meal, however it is wonderful on top of hot chocolate or coffee, pumpkin pie or apple crisp, or really any number of fall treats.

Cream Cheese and Cinnamon Breakfast Cookies (Grain Free)

I had planned to work on graham crackers today, but last night it turned from blazing hot, sleeping with all the windows open, fans blowing, and not a cover in sight to brisk, cool, find some covers and snuggle deep into them. It was such a pleasant feeling that every

one seemed to linger in their beds this morning. When I did finally get up there wasn't enough time for the breakfast casserole on my menu plan. My 4 year old asked if biscuits would be fast enough. I had made some quick grain free drop biscuits with cheese and herbs to accompany dinner the other night and all my boys loved them. So I set about quickly converting a simple biscuit recipe into these Cream Cheese and Cinnamon Breakfast "Cookies".

Dark Chocolate and Orange Cheesecake Bites

 

I don't know how original these are. It seems like there are thousands of freezer candies (or fat bombs) out there. I didn't realize that until this morning when I was actively searching pinterest to try and make sure I wasn't duplicating something someone has already done. I came up with the idea because after having these freezer candies (yeah I know, fat bombs. But for some reason I just don't like the sound of fat bomb, so I will stick with freezer candy or freezer cheesecakes, that sounds much more delicious and doesn't remind me of WWII and the atomic bombs...eh, where was I?)

Low Carb, Less Sugar Chocolate Syrup

I have been a fan of chocolate milk since I was a kid. For some reason I have fond memories of my Dad making chocolate milk for me when we ate spaghetti, I couldn't tell you if this only happened once and it made an impression or if it was a regular pattern, but I often long for a glass of chocolate milk as soon as the meaty tomato sauce smell hits the table. Of course when I was a kid store bought chocolate syrup was still made out of sugar. Now it is GMO high fructose corn syrup and a huge list of chemicals. I have been making homemade chocolate syrup for a few years now.

Coconut Gelatin

I was originally on a quest to see if I could make a healthier Maja Blanca (a Filipino dessert made out of coconut milk). Maja Blanca uses a lot of cornstarch to thicken it and help it set as well as a lot of sugar (and sometimes corn on top of that). While reading and researching I came across a Burmese dish that uses the same basic ingredients as Maja Blanca except that the thickening agent was gelatin. Gelatin has such an amazing nutrient profile (real gelatin like Great Lakes or Bernard Jensen) especially compared to cornstarch that I jumped ship and made Coconut Gelatin instead. This treat is NOT very sweet, the flavors of the coconut milk and raw cream shine through and are not obstructed by vanilla or lots of sugar. This dessert is simple and can be made in less than 10 minutes, but has to set in the fridge for an hour or two. Filled with healthy fats, protein from the gelatin and a smidge of coconut sugar and stevia I served it to my children for snack time (alongside some mandarins) knowing that they weren't going to have a sugar high for the rest of the afternoon.
