Homemade Ghee

 

I thought ghee was going to be hard. I was afraid making ghee would be too wasteful (I mean butter is fabulous why would I want to throw any of it out). I was concerned that I couldn't make it  taste as good as what I have previously purchased. I am happy to say that these things are just not the case. All I needed was a really good reason to jump into making it, going through the Whole 30 program was my good reason!

Lemon Ginger Sauce over Mahi-Mahi

I like this dish because it looks and tastes fancier than it actually is.  I've been making this for several years now after first trying a slightly more labor intensive version (that called for ingredients I don't keep on hand). This recipe makes enough sauce to also cover your side dish and maybe even dip each and every bite into. I use my trusty cast iron skillet and my invaluable immersion blender to make this dish fast. It takes about 30 minutes from start to finish.

Asparagus Breakfast Skillet

School has begun. My world, like most Moms, begins before the light of day has reached me. I am not a morning person. If I want to get a workout and shower in before I become my kids personal shuttle then I have exactly 15 minutes to get breakfast on the table. Real breakfast, full of real whole foods.

Grain Free Cheese Sauce

In the spirit of my month of side dishes I wanted to share my broccoli with cheese recipe. But really everyone knows how to steam broccoli, so the sauce is the true star of the show. The butter, cream cheese and cream combination in this grain free sauce is my base for just about every creamy sauce that I once used a flour rue for; alfredo, broccoli & cheese soup, nachos and more. I simply play around with my cheese options to create the flavor I want. When I was creating this recipe a few years ago, I wanted to keep things simple, something that I could remember without looking at my notes every time, just like the rues I had been making since high school.

Dark Chocolate and Orange Cheesecake Bites

 

I don't know how original these are. It seems like there are thousands of freezer candies (or fat bombs) out there. I didn't realize that until this morning when I was actively searching pinterest to try and make sure I wasn't duplicating something someone has already done. I came up with the idea because after having these freezer candies (yeah I know, fat bombs. But for some reason I just don't like the sound of fat bomb, so I will stick with freezer candy or freezer cheesecakes, that sounds much more delicious and doesn't remind me of WWII and the atomic bombs...eh, where was I?)
